This is a truly exotic approach to the champagne method. The wine begins with an unapologetic electric red hue while intense fine black and white pepper billow from the glass of tiny bubbles. It's rather rare to encounter a dry sparkling wine with so much aroma. In the mouth, one finds gorgeous red fruits of pomegranate, tart raspberry and more pepper. The dry finish offers more fine pepper and long-lasting juicy red-fruit notes. It begs for another sip. This is my best attempt yet at Sparkling dry Zin. I'm in love.
The Estate grown fruit was shaved off our Pitts Home Ranch Estate Vineyard in an early morning in late August. The fruit was promptly crushed, destemmed and pumped into 3/4 ton open-top T-bins. Two handfuls of light and medium French oak chips were added to each bin for early binding of flavors and aromas. The Must was fermented dry iwth a daily regiment of 3 punchdowns for color and structure. It ages for several months in neutral oak and was put on tirage in the Spring 2014. In the Spring of 2015, the wine was finished with minimal dosage to allow true cool climate single-vineyard Russian River Valley terroir to shine. 2013 represents the vintage where we began producing sparkling wines in house. 100% Estate grown, produced, and bottled. This is dedicated to the Sparkling Grandmothers in the world.
