Estate Dry Sparkling Pinot Noir Rouge 2013

Since our sparkling Pinot Noir is fermented on the skins, we offer an electric rouge color. Pomegranate and fresh floral aromas begin the story while tart cran-cherry draws the wine to a long, juicy finish. This fruit comes off our 3-acre Estate Pinot Noir block. We picked 2.5 tons in the early August morning in 2013 in order to make this method Champagne-style wine. After gently crushing and fermenting in an open top tank for 8 days, the must was pressed off and placed in a stainless steel tank for a full malolactic fermentation and some oak treatment via oak chips.
After stabilizing, we filtered the wine and placed it in neutral oak casks for 7 months. In June 2014, we bottled the Estate wine and began the secondary fermentation in bottle where the wine sat on the yeast sediment. In April 2015, we riddled, disgorged and finished the wine with very little dosage allowing for the Pinot Noir character to shine.
