Electric salmon in color, this Rose is brimming with floral, juicy guava and fresh spring strawberry. The wine finishes totally dry and crisp, begging for another sip.
This one ton of Pinot Noir was grown on the Harvest Moon Estate. We harvested, destemmed and pressed whole cluster to a chilled tank all within a few hours as our goal was to retain the freshness of cool-climate Pinot Noir flavors and delicate aromas. Chilled to 45 degrees, we racked the juice off sediment the following day and allows the juice to warm to 58. There we inoculated the juice and it fermented for a long 18 days until totally dry. Malolactic bacteria was introduced as well as a small bag of french lightly toasted oak chips. The small lot was filtered to 2 micron and bottled in mid-January 2017.
