When harvested at a mere 22.5 Brix, the mint and clove notes can be found.

Winemaker Notes

The 2009 season was framed by cool weather and good development in the vineyard. The fruit gained a high concentration of flavor as well as good acidity. The grapes were picked the first week of September, de-stemmed, and cold soaked for three days. Fermentation took place over ten days in small stainless steel tanks. Pump-overs were performed three times per day for maximum, color and flavor extraction. The round, full, and polished texture of this wine comes not only from the high quality fruit, but also judicious use of oak- the wine was aged for 14 months in small French oak barrels.
