Our 2008 Late Harvest Zin begins with spicy, dark coco-caramel aromas, followed up with a pleasantly elegant body and a lingering finish of juicy, tart cherries and cranberries. Our 2008 Late Harvest showcases perfect balance between Russian River Valley fruit, viscosity (RS), and natural acidity. This wine will taste its best from 2010 and cellar well for 5-8 years. This wine was made from a particularly sunny part of the Estate block. Left for weeks longer on the vine with only sips of water, this wine represents the epitome of our Estate Zinfandel... Bright, juicy, perfumed red berried fruit.
The shriveled fruit that was chosen for the Late Harvest program wasn't the most attractive, as it saw some drizzle, mold, and experienced extreme dehydration, but once in t-bins we knew we had a winner. Once fermentation was underway, the must was sampled twice daily in anticipation of the right balance of alcohol, flavor components, and residual sugar. When I felt the wine was in balance, the fermentation was arrested via pressing off to a tank with its temperature set to 30 degrees, preventing the natural yeast from converting any more fructose molecules. Other than dark oak chip bags steeped in the tank, there was nothing added to this wine.
