This artisan production of 150 cases was our continued attempt to allow vineyard-specific terroir to shine through very small lots. This fruit was most likely the first Cab picked during the 2006 vintage. At 23.7 Brix, the fruit arrived at our crush pad with only very slight dimpling. Once the must was in a 2-ton open-top tank, it was inoculated with a classic Bordeaux yeast and allowed to ferment dry in 12 days. During fermentation, the cap was managed delicately with a morning punch down, afternoon hand-punch down and evening pumpover so as to not over extract tannin. The must was lightly pressed to tank for a gross lees settling and racked the following day to barrel. The Radoux-oaking was very carefully monitored to ensure the natural fruit flavors.
