Cabernet Sauvignon 2013
We've been crafting single-vineyard, 100% Cabernet Sauvignon from the Buchignani Ranch since 2002. When the grapes are picked on time, we capture the true essence of Cab's natural reflection. While Dry Creek Cabs can be made in a Napa style with muscular and body emphasized, we love enjoying our Cabs with less tannins and more acidity which is the perfect recipe for accompaniment at your table tonight.
Floral, herbaceous clove, cocoa, earthy aromas. Sandalwood, spice, black olive and spicy tar flavors linger on the mid palate. This wine finishes long and juicy with only slight tannins pulling on your palate.
This single-vineyard Cabernet Sauvignon was harvested in two lots. The first pick captured the beautiful herbaceous floral pyrazine found in classic Cabs and the second pick brought more color, structure and riper clove, coco profiles into the picture. We pick this Cab vineyard before the neighbors' Chardonnay is harvested indicting the stark contrast between styles found not just in the Dry Creek Valley, but in California in general. The cab lots were crushed, de-stemmed and fermented in 3/4 ton open top fermentors outside until dry. The lots were lightly pressed and aged in mostly mature, 4-6 year old barrels for the first year. We stirred the lees monthly for body and complexity and then racked together the following Spring and allowed to integrate. After 22 months in barrel, the wine was bottled in June 2015. No additives or chemicals were added to this Cab to bring out flavor, color or structure.
