Grown on the back block, our 2018 Estate Late harvest Zin is our 16th vintage. We craft this dessert wine with balance and elegance in mind. Sweet, yet not cloying or viscous, our Late harvest Zin is packed full of big, juicy red fruit and black pepper. This dessert wine will gracefully cellar for 8-10 years from bottling date.
Medium, electric garnet hue, this wine is exciting to sip. Big, juicy sweet red raspberries wrapped around a black pepper core jump out of the glass and onto your palate with enthusiasm like a warm Spring day after a long, cold, dreary winter. The tannin, both grape and oak, will assist in cellaring, however it's the racy acidity which will cut through the salty Blue or aged Gouda and sync up with 72% dark chocolate.
Picked late with heavy dimpling on the skins and some rot (a good thing for sweet wines), we crushed this lot into 3/4 ton open top fermentors and pumped over the fermenting must for 4 days before pressing off to a temperature-controlled tank. Tasting the juice 3-4 times per day monitoring very closely the dropping of sugars, the fermentation was arrested with a mere 2.3% residual sugar allowing for the bright, juicy fruit to shine without the viscous, sugary mouthfeel of typical dessert wines. This is NOT your typical sticky sweet wine.4
