Mid-density on color, floral, dried brown herbal, tobacco aromas. Flavors of solid tar, coffee, cocoa and more brown herbal notes and geeen olive lingering on the finish. Grape tannins were gently extracted and the lack of overt oak tannins make for a juicy, zesty finish.
Made in consistent Harvest Moon style, crushed and fermented in 3/4 ton open top fermenters for 12 days, punched down twice per day and pumped over mid-day. Pressed dry to mostly neutral, mature wood and aged for 17 months with leese (sediment) stirring twice daily during malolactic fermentation. The wine was racked twice with third time clean to tank for bottling.
