Cabernet Sauvignon 2017

In classic form, the 2017 Buchignani Cabernet Sauvignon deliveres huge aromas and intense flavors without being a sledgehammer in body, oak or tannin. Got balance? This Cab does.

Tasting Notes

Mid-density on color, floral, dried brown herbal, tobacco aromas. Flavors of solid tar, coffee, cocoa and more brown herbal notes and geeen olive lingering on the finish. Grape tannins were gently extracted and the lack of overt oak tannins make for a juicy, zesty finish.

Production Notes

140 cases grown, crafted and gently bottled.

Winemaker Notes

Made in consistent Harvest Moon style, crushed and fermented in 3/4 ton open top fermenters for 12 days, punched down twice per day and pumped over mid-day. Pressed dry to mostly neutral, mature wood and aged for 17 months with leese (sediment) stirring twice daily during malolactic fermentation. The wine was racked twice with third time clean to tank for bottling.

Cooperage Notes

20% new UMX wood.
