We harvested the fruit for this small-lot sparkling wine off our premier Zin block located on the Harvest Moon Estate. Picked at 18.6 brix, the grapes were bright and tart. Crushed into a stainless tank and left on the skins for mere hours, the must was lightly pressed (1.6 bars of pressure) in order to capture the elegant spicy fruit with out extracting the bitter and harsh tannin's found in skins at lower sugar levels. The wine was fermented at a cool 62 degrees until dry. Malic bacteria was introduced. We filtered the wine to a polished state and the wine was tirage-bottled on February 2017 where it sat for 11 months on sediment. We riddled , disgorged and finished the wine with .5 G/l dosage.
