2016 was a great vintage for our Estate Gewurzt. Moderate crop yield ensured concentration of sugars and tiny sips of water balanced the juicy acidity captured in the aromas and flavors. Picked on an early, cold foggy morning in early September, the clusters were desetmmed and pumped whole berry into the small bladder press. Pressed cold to tank, the juice was cold stabled for 14 hours at 56 degrees then racked off the heavy sediment to another tank ready for fermentation. The juice fermented at 58 degrees for 12 days. 1/6th of the tank was racked down into a new Radaux UMX barrel for malolactic fermentation then racked back to main tank after, creating a rounding effect on the mid. Full ml, fermented totally dry to -1.2 brix. This tiny lot of Estate dry Gewurztraminer was bottled just 110 days after picking capturing the fruit and filling the bottles with raw, deliciousness.
