Grower & Winemaker's Notes
Leaving the Dry Creek Valley in early September, we remember we were the only truck with red grapes. At 23.5 brix, we felt the fruit was ready and arriving at the crush pad, the bunches looked vibrant and perfectly plump. No dimpling on the skins was observed. Once the must was in 3/4 ton t-bins, it was inoculated with a classic Bordeaux yeast and allowed to ferment dry in 12 days. During fermentation, the cap was managed delicately with a morning punchdown, afternoon hand-punch down and evening punch down so as to not over extract tannin yet bring complexity and body to the future wine. The must was lightly pressed direct to barrel where it sit for a full 20 months with an occassional airation through racking. The Radaux-oaking was very carefully monitored to ensure the dominance of natural vineyard flavor profiles and only a slight mention of wood.

This easy drinking yet structured Cab is A-typical in the arena of world-class Cabernet. The beautifully herbaceous aromas, the soft supple tannins, balanced acidity and careful use of new oak all come together to make an approachable Cabernet Sauvignon that'll cellar wonderfully for 5-8 years.
